Crab Cakes and Fried Chicken Sandwiches

 The start of an extra long weekend...I just love a holiday weekend. But before ee start...a quick food post. And I think I'll be back to do one more review tomorrow before I start my trip. In the meantime, this is what I made this week.



I haven't made very many crab cakes...I think I only made one regular version and I also did a vegetarian omelette with Jackfruit. This recipe didn't start as a crab cake recipe- it's some sort of shrimp stuffed crab but that just seemed like it was doing too much so I changed up the recipe a little bit. I made a few other changes- I used a Mexican Cheese blend instead of swiss- I've never  liked Swiss cheese. And probably changed a few other things. They were so good! Mine were a little juicy so they didn't get crispy on the outside but still really yummy. I used a blend of imitation crab and then the cheaper crab in a tin (Bumblebee brand). I'll probably use the same mix for any future crab cakes I made- although this isn't something I come across often. Served with Rice and Sweet Potatoes.  I made "burgers" with some of the leftover- Krabby Patties. 


Next thing- Fried Chicken Sandwich. This originally started as a a Fried Pork chop. But I don't eat Pork..so we turned it into Fried Chicken. And then I decided to just make it into a sandwich. It was OK. There are probably better recipes for Fried Chicken but this was quick and easy. Recipe states salt and pepper and I thought I would try it with The Kinder Chipotle Cherry Seasoning- which sounds amazing but actually isn't. Served with more Sweet Potatoes on the side because that's what I'm currently obsessed with. And I didn't want anymore real vegetables after eating a whole head of celery. 





And that's all! Not a bad week for me in the kitchen.
