Soy Peanut Ginger Marinade, Spicy Chicken Sandwich, and Beef Schnitzel

 It's already that time to see what I've been cooking this week. I feel like I have been cooking a bit more than usual- just because I haven't made anything that would give plenty of leftovers and keep me out of the kitchen. Also..I am still doing a freezer cleanout- ever so slowly. 

First thing I made was the Spicy Chicken sandwich. You really can make the best chicken sandwiches at home. This wasn't the best one I had ever had- but it's good and hits to spot without having to go get fast food. I don't usually eat much fast food anyway- I'm too lazy to run around and go get it. But I would run into the kitchen to make this. I made the coleslaw- and it was good. I haven't had coleslaw in a minute and now I have a big ol' cabbage I'm gonna also need to figure out how to use up. Coleslaw you can pretty much just throw together- this was different because it uses yogurt...and honey. I think I usually just use sugar. I like the yogurt addition. Certainly much healthier that using all Mayo. As for the chicken sandwich, I pan fried mine. I'm just not sure about baking it. I ended up making two more I liked them so much- and I wanted to use the rest of the coleslaw. It was solid. I really liked it. Also...loved that you can use yogurt in place of the egg step- I'll have to remember that so I can use it later. And..I was very generous with the chicken patty...it was flowing out the sandwich. 



Next up was a peanut ginger marinade. I had a package of glass noodles I've been meaning to use for forever. I liked this marinade- it made the chicken come out especially good. Also it was another chance to bring out my WOK. I think it was a good marinade- much better than the Fajita one from the Vitamix book. I wished I made a bigger batch.


And last up- this was part of cleaning out the freezer. I bought beef schnitzel a few weeks ago..and finally decided to make it. Unfortunately it turned out I don't like beef schnitzel. I think Turkey is the best. It could be the way I made it..not sure. But I won't be trying that again! Completed the plate with cheese mashed potatoes and broccoli.
