Crunchy Twice Baked Granola and Spring Rolls with Peanut Sauce

I'm having a super productive Sunday. Yay, me! And still have all evening. I just got out the kitchen and am probably about to head back to clean it up but figured I would relax a bit...knock out a post and then get to it. 

 I really don't know why I don't make granola all the time. Every once in awhile I might buy a bag. It really is rare though. I think I have made two granola recipes and this is the simplest and one of the best tasting. I just had a fruit parfait and piled it with berries, this granola, and a little maple syrup and it was the best thing ever. I think I will end up making this again and again as a go to. The only thing I did wrong the first time was not bake it enough...it was so soft. So the next day I rebaked it until it was brown and crunchy...so good! I almost forgot, I did add just a touch of maple syrup to it too...I think next time I will also add pecans.



The next thing I made was the Spring Rolls with the Peanut Sauce. I have a  new respect for people that roll these because I don't have the patience (nor the skill) . I did about five and then shoved the rest of the wrappers back into the packaging. Mine did not come out cute at all...but they were pretty good. I still have mango, red pepper, glass noodles etc left so I am just going to make a salad with the rest and use the Peanut Sauce as dressing. Speaking of Peanut Sauce....it was bomb. Who would have thought a peanut sauce would be so easy to make?

The whole plate was ugly but it was actually good. I did my best...better luck next time.
