Blueberry Apricot Cobbler, Beer Braised Collard Greens, and Fig Dressing

I'm so stuffed I can't really move right now. And I'm fighting sleep. But I have this post and another Christmas movie before I turn in for the night. Mostly I want to get started on my shopping list so I can make the next couple of things in my rotation. Always gotta stay making something new.

Starting with a cobbler. I don't really make cobblers often..and I don't know why. They are basically the easiest dessert. I used this recipe as guide... and you can see they are very different. I think I was trying to half the recipe...and I decided to do blueberries and some canned apricots because I didn't feel like searching for the fresh ones. And almost every fresh apricot I have ever had has been dry. I also attempted to quarter the biscuit topping but pretty sure I did something wrong but never mind- it was perfect! I liked this because it wasn't too sweet...a very nice quick fruity dessert. 


Next up, Beer Braised Collard Greens. As a kid I refused to eat greens. But as an adult- give me all the greens! I only eat the fresh greens- I don't like the frozen ones and won't eat the canned. So as soon as my local store gets some greens I snap them up. They are a pain in the butt to clean and make...but worth it! I also made some candied yams, rice, and saucy chicken to go with. And that was Sunday Dinner. I used a Belgian Beer and loosely followed the recipe. I made mine in the slow cooker and let them cook forever until they were melt in mouth tender. So good! 


Last up, a quick fig dressing from the Vitamix recipe book. This is good- but the dressings from my Vitamix sure are tasting more and more alike. I did like it...but probably won't make it again. This is basically the recipe here. It wasn't a very appetizing color nor texture so I shall share my salad pic in black and white.


And that's all for this week...I had a pretty great week as far as cooking AND baking.
