It's definitely too soon for a food post since I just did one. But I need to post these rather than sitting on them so I can make my grocery list for tomorrow.
Today was basically a veggie week. Almost. Except for the chicken/turkey salami I put on my second pizza.
Starting with A Hummus and Grilled Veggie Pizza. Surprisingly good. And vegan without using any weird vegan substitutes. I made the hummus and crust a few days before. Made a ton of hummus so I actually just chucked the rest in the freezer to eat another week. I bought the exact veggies in the recipe- zucchini, shiitake mushroom, yellow squash, and red pepper. I added garlic powder and chipotle powder to kick the flavor up a notch. If you need a vegan pizza this would be great option.
Next up was a thin crust recipe for pizza. Came from the Vitamix book and I can tell you it isn't my favorite pizza crust recipe. It was too wet. Had to add a ton more flour. Which diluted the salt a little too much. Wouldn't make it again. It did better after sitting a few days though. I made a chicken/turkey salami pizza. Yum! Also whipped up my own pizza sauce. I prolly could have taken a better picture. I was really in the mood for square shaped pizza this week I guess...
And last up.
.black bean salsa. Just the type of summer recipe I needed and didn't know. I use some black beans I had already cooked and frozen awhile back. Added everything as per the recipe. I ate mine with cous cous and then the last two days I used some of the filling with cheddar to make a black bean burrito. Love it and perfect way to use up those frozen black beans. I probably could have taken a better pic. Whoops!
Not a bad cooking week for me!
