Raspberry Swirl Rolls, Kippers, Roasted Vegetable Spaghetti

 It's both time and not time for a food post. So here we go. Starting with some sweets..

I have wanted to make something different than a cinnamon roll...and just never have. I have so many ideas. Nutella Rolls. Samoa Rolls. Orange and Cardamom Rolls. Cookie Butter Rolls. Yet I've really made none! But now I guess I can say I made Raspberry Rolls. I doubted the recipe the whole way. My thoughts were there wasn't enough butter (but I guess the heavy cream and sour cream go a long way!). I also thought there wasn't enough yeast...and it doesn't rise as much as any of the other rolls I've made. And then the pic on the blog I got the recipe just didn't sell it for me. But I carried on. And I'm glad I did. This was one of the softest rolls I've ever made. Saving the recipe for sure! It might be my new go to...at least when I have the sour cream and heavy cream. Those are only sometime ingredients for me. I did also make the icing but it's not necessary. I would skip it. I will probably end up freezing most of mine and making bagels or something in a few months to use it up. I also didn't use as much sugar in the filling but I did use King Arthur Raspberry Jammy Bits. I don't think it did much in the recipe...but I'm still testing them out....I did end up freezing most of them so I can pull out as needed.

Next up kippers. I haven't had kippers...but I have had herring fish in a can which is what this really is. I don't know how to get the fresh stuff to make it the UK way. So I settled for canned. Which is fine. Not as great as the smoked mackerel I get. But maybe lower in salt. But high in protein. I had mine with two eggs (more protein) and grits. And maybe odd but I add ketchup. Added some peach tea too! Prolly coulda took a better picture...




And last up..a roasted veggie sauce for spaghetti. I roasted onion, mushroom, two pounds of Roma and a few other things. Then you just blend it all up. It's an OK sauce. Nothing groundbreaking. Makes a ton though! I would try it with better and more flavorful tomatoes. Excuse the amount of cheese. It's not as much as it looks.
