Vitamix Caesar Dressing and Vanilla Cupcakes

 Quick food post before I get myself up to "make" a candle. I've been meaning to do it all week and just never got around to it. So today is the day. 

In the meantime...this is what I made this week. Only one more dressing to go and then I move on to a whole other section of the book. Thank goodness! I was pretty excited for this- because I am a fan of Caesar salads. I only recently found they originated in Mexico and now I want to visit where it was invented. One day I will. In the meantime, I made this copy cat. It's OK. I don't know that I like better than my favorite bottled dressing. I don't think it stood up toe actual Romaine lettuce. I liked it better on mixed bagged salad mix. I might make it again. 


Then I made cupcakes. This recipe is supposed to be the same or similar to a bakery called Billy's Bakery. I am definitely not a fan of vanilla cakes or cupcakes. I just find it so boring. But I wanted to make it anyway to see if there was any magic to this recipe. And...no. Not really. I still am not a big fan of vanilla cake...and I wouldn't make these again. I tried to make them a bit Valentine themed and I added coloring to the icing (I didn't make that icing recipe, just free styled it) and threw a raspberry on top. I did quarter the recipe and it made five decently sized cupcakes. I always thought I wanted to master cupcakes- but I don't really like cupcakes like that. I must be a monster. It's mostly because I don't like a lot of icing. I scraped most of the icing off of these. I think I'm just an old fashioned cake girl.


I did order the King Arthur Cake flour to see if that made a difference. I don't normally use cake flour...I'm gonna keep it kicking around  and try it in other recipes to see what I really think of it.
