Time for a food post....I fell off with cooking it fells like. But that's ok. I'm going to get back on it this coming week.
Starting with Black Bean Burgers. At this point I've made a ton of Black Bean Burgers. This wasn't my favorite. I can't tell you what my faves were but this wasn't it. I messed up the texture I guess. I used the food processor and it came out too juicy. So they weren't solid enough. I did fry them up...tried adding more breadcrumbs. It was edible- but they coulda been so much better. I think I like a smoky/spicy burger best. It was originally a Vitamix recipe.
Next up- Buckwheat Waffles. It was about time to pull out my waffle iron again. And I've had Buckwheat flour just sitting there staring at me..waiting for me to finally use it for what I bought it for. I didn't use Polenta- I subbed Almond Flour. These were pretty good. Way more filling than just waffles made with whip flour. Recipe Here.
Alongside that I made Chicken Sausage. This was a breakfast recipe from the Harry Potter cookbook (unofficial). It uses meats I don't eat/can't find so I just used chicken. Chicken is not fatty enough to make sausage. But the taste was faintly reminiscent of sausage. The color coulda been better. Also...I did add Maple Syrup- because my favorite chicken sausage has maple in it.
