Apricot Dijon and Lasagna Quick Bake

 I have a quick recipe post today. Just two little things to share. I didn't miss cooking too much while on vacation because I cooked and also partook in a lot of homemade and homegrown foods. I ordered a tropical fruit box and we tried Mamey, Longans, Pink Pineapple (Meh), and Cocoa Pods. I had the best homegrown watermelon. There are a ton in the backyard. I tasted a large variety of tomatoes- my sister made tasting plates. Then she made a BBQ completely of homegrown stuff- tomatoes, peppers, onions, garlic. I picked a billion cherry tomatoes off the vine and snacked on them. They were amazing!  

One thing I made for everyone there- Apricot Dijon Chicken. And a Quinoa with lots of homegrown veggies- beans, garlic, onions, cucumbers, tomatoes. It was so good I made it twice. This is originally pork chop recipe but I don't eat Pork. These were good. I would make them again....


Next up, I made this when I got back. I needed something easy to take to work and this was just that. It is vegetarian and easy to make, although I did kinda miss the meat. I forgot to add to the tomato paste to the sauce and I think it would made a difference but it was fine without. It only uses cottage cheese and I missed the ricotta in this. But overall it was good. Which is all I can ask for, Also..it gave me the opportunity to finally use my new casserole dish. One thing I'll take from this it to grate my parmesan in the vitamin. Especially when I need a lot. Either that or I need to pick up a mini food processor.
