Recipes: Zucchini With Farfalle

This. Was. So. Good.

Seriously.

It was like alfredo sauce only it was homemade. With Zucchine. And do yourself a favor and almost double the sauce and add shrimp. It was possible the best dinner I ever made. And don't be skimpy on the pepper in the sauce. It makes a bunch. Note: I didn't use 5 zucchini more like three.

"Cream Sauce with sauteed veggies over bow tie noodles. Serves four as a main course, 6-8 for first course."

Ingredients:
5 tbls Olive Oil
5 small zucchini
2 onions minced
1 clove garlic minced
2/3 cup heavy whipping cream
1 (16 ounce) package farfalle noodles
1/2 cup.grated Parmesan Cheese
salt/pepper to taste
2 tbsp grated Parmesan Cheese

1. Heat oil in large skillet over medium high heat. Add zucchini and saute quickly until golden. Remove and set aside.
2. Add garlic and onion to the pan, and saute until golden.Stir in cream; increase heat and boil until sauce is reduced by one third.
3. Meanwhile cook the pasta according to manufacturer's directions. Drain.
4.Add noodles, zucchini, 1/2 cup cheese, and salt and pepper to the cream sauce. Toss thoroughly until heated through. Serve immediately with additional grated cheese.
