Morning Glory Muffins and Mrs. Weasleys Individual Beef Pies

 A food post- I had been craving some real homecoming for a minute. I've been cooking- but not cooking cooking. By that I just mean trying out new recipes. Which I always do, but for some reason it felt like I hadn't been. I don't know why. I guess I hadn't made anything complicated. Something like that. 

Anyway...this satisfied my need for homecoming.


Starting with morning glory muffins. I've made morning muffins before and really liked them. I especially like that they contain so much whole wheat flour. I always feel better about eating them. I also really liked these and would definitely make them again. They had all kinds of goodies in them- coconut, carrots, walnuts, and raisins. I did make a few changes- I used buckwheat flour instead of regular whole wheat because that's what I have on hand. And I used almond flour instead of oat bran. I didn't want to order oat bran and I had some almond meal hanging out that I need to use a bit more. Love them though and would definitely made them again! I stuck most of them in the freezer to pull out for a snack whenever. I love having muffins ready to go like that.

And then I made Beef Pies. I'm still cooking through Mrs. Weasley chapters and the next four recipes are meat pies. The book really does a great job with their meat pies...so I'm not mad at all! This was very similar to the other one...I think it had less ingredients though. This takes quite a bit of time between the crust and the meat. But it is so worth it! I made the crust and really thought I messed it up because I added too much water. But it was still perfect. The filling was amazing. Just so good overall. I made some veggies and mashed potatoes to go with it. So good!

The only thing was it said it makes 6 but I only ended up with four. I think I was supposed to use more mushrooms. Or not stuff them with so much meat. IDK. I did have some leftover dough which I shoved in the freezer to use later. 

It was a great cooking week for me! I still have one more meat pie to go and can't wait to dig in tomorrow.
