One more post before I call it a night. Just another two new recipes I gave a go this week.
Starting with a Vitamix recipe that I didn't make in the Vitamix. I like the Vitamix cookbook but sometimes it wants you to use the Vitamix for things you really don't need to use it for. So I pulled out my food processor. I don't use it much but I want to get my money's worth so I was happy to pull it out. This salad did have radishes- but I went to two stores and they were basically sold out. So I just added extra carrots. I made the blue cheese dressing myself. I don't like Blue Cheese though...this is my 2nd time trying it and I don't get the hype. Luckily the flavor was barely detectable in the chicken salad. I made my chicken breast in a crock pot and shredded it. Then shredded the veggies in the food processor too. I actually like the salad well enough and especially liked the addition of iceberg in the chicken salad. Then I made some Pita bread and ended up with this. Would make a good summer dinner. I probably won't make it again though. But I'll definitely add iceberg when I have it to any chicken salad I make. I found the recipe posted online here.
Next up...mashed turnips. Only I couldn't find turnips and didn't want to spend a lot of time running around for it. So I subbed Sweet Potato. I mostly love sweet potatoes roasted...I prefer regular white potatoes for mashed potatoes. But when I come access a recipe I'll give it a whirl. Even though it shoulda been turnips. It was OK. The nutmeg was a bit different. I made some zucchini and tuna steaks to go with it. Also, my first time making tuna steaks. It's always good to try something new. But I prefer Salmon. And at least Salmon is cheaper! This was a recipe from the Unofficial Harry Potter cookbook- Mrs Weasley. I'm actually almost done with her chapter....
And that's all! Two relatively healthy recipes...hopefully I get to make something a bit more "junky" next week....
