I didn't eat much over the past week due to food poisoning...I feel like it really threw off my whole week so now I have to play catch up. I do need to get these out the way though so I can go ahead and make my next shopping list and start on the next rotation.
Peanut Soba Stir Fry- This is the second peanut stir fry I've made and if I am comparing I preferred the first one I made. I think the problem with this was the soba noodles which ended up getting a bit gummy. I think I used regular stir fry noodles last time and they suit so much better than these. Unless it was just the brand I used. It's not bad..but since I prefer the first once I made...I wouldn't make this one again.
Lemon Garlic Shrimp Pasta- This was a super basic, easy pasta dish. I did a few things to kick up the lemon. It was ok. I don't LOVE shrimp in pasta...but it was fine. Kinda boring.
And last up...Rhubarb Crumble. I was keeping an eye out for Rhubarb just so I could make this. It came from my Unofficial Harry Potter cookbook. I haven't really tried Rhubarb in anything outside of a Rhubarb Soda. I baked it up..then got sick so I didn't even try it until days later. I'm sure the quality suffered as it sat. But...Rhubarb flavor is OK. The crumble was too sugary and gritty. I threw most of it away. And wasted my good pecans. I would much rather a good Blueberry Crumble.
Now I'm off to finish cooking up my Easter dinner. I have lamb chops, candied yams, green beans and rice to make so I'd better get started!
