I need to make my grocery list for tomorrow- so the clean up the list it's time to make a quick post. It's crazy to think I just came back from the Mediterranean and these are the two recipes that were next.
Starting with Mediterranean Pasta. Originally calls for Tuna but I don't like Tuna fillets. So I changed it to Salmon. Which I LOVE! This was easy and relatively healthy. Not mind blowing. Just OK for a weeknight dinner option. I don't think I'll make it again but I didn't mind the leftovers.
Then I made Feta stuffed Chicken. I love Feta cheese so I was excited for this. It has Parmesan too! It probably would have looked better on top of pasta. But I did like it with the rice. Yum!
And that's all for this week! Now off to make my grocery list....
Random: I got my order of Big Spoon Roasters Nut Butters. Their Vanilla Caramel Almond is THE best almond butter. I love their peanut butter too. I will always purchase from this company and if you are looking for a small business to support that has amazing nut butters- give them a try!
