Oven Roasted Round Roast in a Vegetable Gravy, Fresh Beets, and Light and Fluffy Coconut Cake

 Already that time for another food post. After all the eating out I did this month I am enchanted and obsessed with my kitchen and cooking. I'm just really appreciating the home cooked meals. I was definitely in the kitchen this weekend and this is what I made:


Oven Roasted Round Roast

I really don't have great knowledge on the different cuts of meat. I have really only used chuck roasts and that was rather recent. For this recipe, I bought a round roast. I should have done research before because I didn't realize there were different kinds of round- I ended up with to round. I prefer chuck but the round roast is leaner and probably healthier for you. This kinda tasted like airplane food but better seasoned. I liked it as a basic dinner. Nothing terribly exciting..but good and filling. Also very easy. All I did was sear the meat, then mix the "gravy" ingredients in the Vitamix. You can do it in the oven but I made mine in a crock pot. 

Then I added my fresh picked, balcony grown beets. They were so good! I just threw some olive oil, salt and pepper on them and roasted. So good! 



Then I finally made that Coconut Cake I have been craving. My advice- let it sit a day! It takes a day to develop the coconut flavor. I wasn't sure about the cream cheese icing but I think I prefer it! It was very moist- no dry cake here. And I did make one big change- I accidentally left my sour cream out overnight so I couldn't use it and didn't really feel  like going to the store so I used Greek Yogurt instead. I actually really like it, I would make this again. I was thinking this would be my last cake this year- my goal was to make four and this is the fourth one. But I still have cake flour I need to use so maybe I'll do one or two more. 



And that's all! Not a bad week in the kitchen for me.
