Jerk Chicken Sandwhich and Oven Baked Onion Rings

 For some reason I am up very early. Even though I could probably use a bit more sleep so...figured I would knock out a post. Or two. We shall see.

Starting with a Vitamix recipe. This is originally a Pulled Pork recipe but I decided to sub it out for chicken. I don't eat pork so...chicken is usually a good substitute. I don't think this really picked up the jerk chicken flavor but it was good enough. I don't think I would make it again. The funnest part was using the Vitamix to blend up BBQ sauce with pineapple. Easy way to change the flavor. The star of making these were the burger buns. I stopped at one store and they were sold out of buns...so instead of driving around more I decided to make my own. I used to do it a lot. These were so good! Even though the store bought are good, these were much better! I served with roasted butternut squash and lentils.




Then I made a baked onion ring recipe. I've been on an onion ring kick and I bought a few of the different frozen ones which weren't bad. Of the ones I have tried (Nathan's, Mcains, Alexia) the Alexia are my favorite. These were a good try. Certainly much healthier. They did actually get pretty crunchy and I didn't spray them with oil but I did coat the pan with olive oil pretty liberally. But I think it could use a lot more seasoning. As well as I watched a few people make them on youtube and I think the battered and then dip in panko method looks to make the best. These were good and let me know there is hope for baked onion rings. But I don't think this particular recipe is it. They did hit the spot and I'm no longer craving rings. I could have taken a better pic- andI do want to try them with the ketchup, mayo, and sriracha mix. Maybe next time. I jut grew up dipping them in tartar sauce and I can't imagine them going well with anything else. 

Excuse the horrible picture...and the fact that I cooked it on my most ruined baking pan 😂 I put it on a nicer plate, I just was too hungry to take a picture.
