Chicken Pot Pie

I feel like I've made a million chicken pot pie type of recipes in the past year. They are a lot of work...but can be so worth it. 

This one was a lot of work...and I'm not sure if it's the recipe but it definitely was not my favorite. 

The first mistake was probably mine...I used too much shallot. It said use a large shallot and for some reason I used a couple. I was tired and not really sure what I was thinking.

Another thing, the ingredients didn't match up with what the blogger put in. So I was missing the bell pepper. And then I thought the recipe was supposed to just have the potatoes and carrots. But somewhere in there she mentions throwing in something green. I think I prefer more veggie variety in my pot pie. So I like carrots, peas, and sometimes cauliflower to go in the pot pie. 

I usually pan fry the chicken so baking it was new to me. As was boiling the veggies. I think my preferred method is just steaming them 

The flavor was just a little strange to me. Not bad. But not that chicken pot pie taste I expect. It was full of chicken though. I used 4 chicken breast because five honestly seemed like a lot. And it would have been.

I always make my pie crust from scratch. It got quite brown (ok, black) in the oven but it didn't really taste burned. Our oven is kind of evil.

So...I wouldn't make this recipe again. It wasn't my favorite pot pie. If you are going to put this much work into making dinner it needs to be out of this world.
