Easy Butternut Squash Soup and Apple Walnut Steel Cut Oats

I feel like I haven't made a soup in forever. Which is pretty crazy because I'm the soup queen. I usually make a ton of soups. So I was pretty excited when I saw this. 

The recipe is originally for Pumpkin soup. But I missed fresh pumpkin by about a week or so and I hate canned pumpkin. So I subbed Butternut squash. I've never made a butternut squash soup but I'm game to try anything and I think they were perfect to sub with.

The soup came out really good. It had a little kick from the cayenne pepper but I really liked it. The only thing I would do differently for next time is to actually run the soup through the blender to make it smooth. I was lazy and used an immersion blender. It was still good but the texture could have been better.

Also from the same blog I made Apple Walnut Steel Cut Oats.  I've never made steel cut oats. They were pretty easy. I would make them again. But I wouldn't make this recipe. Cooking the oats in apple juice was kind of pointless. It didn't add any good flavor at all. I added fresh apples on top and walnuts and it didn't do too much for the oats either.

I've made better apple flavored oats by mixing leftover homemade apple pie filling into oatmeal.

It looked good though!
