I'm not sure what happened but all the sudden it's fall. Cold Fall weather. I don't know how we ended up in October so quickly but here we are. I made this a couple of weeks ago when the weather was nicer and I found green beans super cheap at the store. I got about two pounds for only a euro and some change!
To go with it, I was going to make some blackened cajun salmon but the store was all out. Just my luck so I had to improvise and ended up winging a balsamic vinegar chicken.
Anyway.....green beans. I've made a lot of frozen steamed beans and only made the fresh kind once. And they didn't come out so great, so I was happy to follow recipe.
I left out the mushrooms. Wasn't sure about the water chestnuts but they were actually pretty good. In my head I feel like I've had water chestnuts before and found them gross.
Anyway...apparently the secret to green beans is boil (blanch?) then cook them in oil.
I had mine with balsamic chicken (it came out too fruity cause I used raspberry balsamic vinegar) and boxed mashed potatoes (not a fan of boxed but I needed to use it up!).

I probably won't make the recipe exactly as written but next time I see cheap, fresh, green beans...I will have a good idea on how to cook them so will definitely grab a couple bags.
