Mmmm Quesedillas. With a twist. Seems like it's more of a breakfast recipe but I've made them and had them for dinner the past couple of days.
I started off with making the creamed spinach. As a child I hated Spinach. I know Popeye ate the stuff by the can (That's nasty). Luckily as an adult I don't mind it so much. But maybe if I had it creamed per this recipe as a kid I may I have loved it. Maybe.

It was really good. Probably the best spinach I have ever tasted. I could eat this by the bowlful. It was easy to make too! I think I added more spinach than it called for. When I first plunked the frozen spinach in, I wasn't too sure about how it was going to cook down, but it turned out fine. I used the recipe linked in the original recipe post.

Next I made the tortillas. I want to master them...the recipe I used was really good but used a LOT of Olive Oil. I'm still looking for the ultimate tortilla recipe. You can easily buy them though.
Then just assembled them with cheddar, a fried egg, and some spinach. Warm it till the cheese melts and the tortilla browns. And dinner!
I actually loved these. I could see myself making them again. I think it's one of the best recipe's I've made starring spinach. I had mine with some homemade beans the first time but they are so filling it's best to eat them alone.
