Qabuli Pulao (Rice Pilaf with Meat, Raisins, and Carrots)

With everything that's going on and being home,  I have been pretty faithful to making a new recipe each week. 

This week's recipe featured lamb. I have never made anything with lamb. I do really like Lamb Chops but don't eat them often at all. I couldn't find lamb on the bone, which I'm sure would have made this much better, but you work with what you have. I found a package of frozen lamb in my local store and decided make it work.

I kind of find a recipe from youtube and mostly worked from that as it was a one pot dish and relatively easier than the recipe from the website I usually use.  I used a mix of basmati rice and jasmine. It was way too much rice. I would honestly probably half the rice.

I fried the raisins and carrots first. Frying raisins was a little strange at first but they actually were more chewy and sweet. Then I seasoned and fried the lamb. To be honest, I probably could have added more seasoning. I let it stew in the water a little with broth and seasonings. Then added the rice and let it cook some. Added the lamb and carrots and let it cook through and it was done. 

I did end up adding more cumin and cardamom. And added salt at the table because mine was under salted. 

It was actually pretty good. It seems a little strange but I actually like the raisins in the rice. If I were to make it again I would probably do things a little differently. I think the lamb would have tasted better grilled...so I might make the rice as is and then grill the meat. 

But I rarely repeat recipes anyway.
