It’s been forever since I made a muffin recipe. Idk why I don’t make them every once in awhile... they are the perfect breakfast. Back in the day I remember us having a steady supply of the Otis Spunkmeyer muffins.
My favorite was the Banana because it was the least artificial of the bunch.
Anyway, I found this recipe on The Little Epicurean and after my bananas finally ripened I made them.
I used pecans instead of walnuts and made the Jumbo muffins. The banana flavor was lite and went perfectly with the chips and nuts.
And they came out amazing.
Check them out! I wish I had gotten a better picture from the side. I had six jumbo muffins and about six minis.
