Qorma E Samaruq (Chicken and Mushroom Stew) and Qorma-e-Gul-eKalam (Cauliflower Stew)

 It was the week (weeks)  of stews...at least for me. Trying to make them all before the warm weather sets in. I'll probably still make a few in the summer though...I don't really cook according to the season unless it's just way too hot.

Anyway, the first stew I made was the chicken and mushroom one. You can find the recipe here. This is one I will actually be saving because it was really, really good. One of my favorite stew recipes and I don't think I have many. It was easy except for cutting up a whole chicken. I've never done that before. My Dad wasn't home so I couldn't bug him to help me 😁 The chicken was cut up but it was hard and I probably didn't do a great job. Other than that the recipe was very easy and uses pretty basic easy to find spices and ingredients. 



Then I made the Cauliflower Stew. I never think of stews as being vegan/vegetarian, but this one is. Or mine would have been but I made some homemade chicken stock I couldn't let go to waste. So mine wasn't vegan. I don't like cauliflower, but I did like this. For the most part. The spice and sauce was really good. Even the cauliflower was nice but something about the texture made me miss chicken. It was really nice otherwise. If you are vegan/vegetarian I would recommend giving this recipe a try!
