Beef Stew with Herb Dumplings, Blistered Pea Hummus, Zucchini

Quick food post today because I stopped watching a show in the middle of watching it because it was way past my bedtime (I still stayed up two more hours) and now I just want to watch the ending. So we will breeze past this post.


 Starting with Beef Stew. I haven't made a beef stew in years and this is definitely the best one I have ever made. I actually bought the right type of meat for the stew and really focused on searing the pieces for max flavor. This was actually a very easy recipe- just have to start at a decent time because it does need time to make the meat tender. The dumplings were also super easy and had good flavor- I think I would add a bit more of the seasonings if I ended up making it again. And if I had some chuck steak I needed to use up- I would make it again. This was a recipe from the Unofficial Harry Potter cookbook. It's another Kreacher recipe. Obviously Kreacher knew what he was doing in the kitchen even if he was mostly unlikeable.


Next up, Hummus. It's been a couple years since I've made Hummus. I love Hummus-especially homemade. This is a very different one than the basic one I'm used to. I did end up adding in some hot sauce to kick it up a little bit. It's great though...and extremely filling. I like that I can get some extra
 green veggies in because I have been slacking the  last few weeks on veggie intake. Whoops! I basically halved the recipe and it still made an absolute ton. 


And last up- Zucchini Fritters. But I tend not to like this type of stuff so I did mostly the same seasoning and just sautéed. It's healthier. I made a basic salmon and rice to go with it.
