Blueberry Lychee Baked Oatmeal, Pesto, and Classic Roasted Chicken

 It's already that time for a foodie post. Or it may be a bit early. But I gotta get it done so I can make my grocery list and hopefully get to the store tomorrow. 

So I made three things.

First- baked oatmeal. Why did ya'll not tell me how good baked oatmeal is? It was like a blueberry cheesecake. I used canned lychees because I bought some awhile back and wanted to use it up and blueberry and lychee sounded like they would go good together. Also peach is no longer in season. It was too good though! I was pretty grumpy the whole time I made this because it was more work than throwing it in a pot and cooking it up. And it had to bake for 45 minutes. But it was so worth it. I think it's great because you really up the protein with the addition of eggs and yogurt. I foresee me making this many, many more times. If you haven't tried it, try it! I think I'll make a raspberry/canned peach version next.




Next up, I grew basil this summer and it was starting to flower so I decided to turn it into Pesto. I didn't follow a recipe this time, subbed some of the pine nuts for slivered almonds. And it came out so good! I intended to make pasta but it wasn't rolling right so it went into the trash. I used dried noodles. Still very yummy! I also  froze a little of the pesto and plan to use some on a homemade pizza.



Last up, a classic roast chicken. There is no shortage of roast chicken recipes in the Unofficial Harry Potter cookbook. This one was basic. It suggests crimes against chicken by only seasoning with salt and pepper. I used a lot more seasoning of course. Roasted on top of veggies. Then I just made cous cous and mixed the roasted veggies with it. Very easy dinner. 

Overall, it was a very good week for me!
